I have various XMLTV sources that result in the series/episode number appearing in the ARGUS browser, however none of this info makes it into XBMC. Is there anyway to make it happen, or is there any way to embed the series/episode data into the description (which does get sent to XBMC)?

Just change the default recording file formats to include the series and episode numbers e.g. I have this set up for Series:
Series\%%TITLE%%\%%TITLE%%.S%%SERIES2%%E%%EPISODENUMBER2%%.%%EPISODETITLE%%
Series\%%TITLE%%\%%TITLE%%.S%%SERIES2%%E%%EPISODENUMBER2%%.%%EPISODETITLE%%

Except my understanding is that although this changes the filename, none of the series data shows up in the recorded TV section of Kodi - it only works if you add recorded TV as a video source & scrape it?

Yes, that's right. The recorded TV section doesn't support the display required because the shows have to be in the kodi database to hold all the data required. I just added a source and then have the shows in the TV Series section.
